Why scale 1:72?

I am occasionally asked why I always develop models on a scale of 1:72 and not choose a scale, for example, giving a model of about 30-50cm.  The reason is quite simple: I wish to have a scale whereby all my models can be placed next to each other without looking ridiculous, ie they can all be compared one with another.  It looks great putting a "tiny" S2 Tracker next to the "mighty" Martin Mars, knowing that they are both to scale.
But why 1:72 and not the larger scale 1:48?  The answer is that not everyone has either the space to exhibit or to store numerous models.  My largest model, the Martin Mars water bomber has a wingspan of over 80cm, and that at 1:72 .

Why so many sheets per model?

You may wonder why I don't cram as many parts as possible on a sheet, and save, perhaps, one sheet of paper/card. 
1. Personally I don't like making models from sheets where every cm, no mm, is filled to, Halleluya, save a sheet of paper.  Lack of aesthetics, I feel.
2. For bulkheads, and numerous other parts, you need waste card to increase thickness anyway.
Why so few military airplanes/jets?

Basically a personal choice.  I hate wars and as someone with principles, I only occasionally break these to build something which intrigues me - WW1 planes (I wish to claim that it was a more romantic war, which of course it wasn't), and seldom jets, just fuselage tubes to me, and then I go and design a F89!
